I’m about to bake peanut butter cookies, (sad to say, I’ve never baked anything from scratch before) and the recipe says to use an electric mixer. Would it be okay to use a blender instead if I don’t have an electric mixer?

      Yes - do it on a pulse cycle.
      You can also do the rubbing in by hand.
